It's Getting Chilly, Warm Up With Some Brandy and Cognac

As November slowly fades into December, it is inevitable that the cold is quickly approaching. There is something revitalizing about brandy and cognac that will warm up even the coldest of winter days. These spirits are sure to give your customers an escape from the seasonal conditions.  The following recipes are guaranteed to please and provide a creative outline for success behind your bar.

Brandy Old Fashioned

1 sugar cube or 1 tsp. 2:1 simple syrup
2 dashes Angostura bitters
1 orange wedge
1 cherry, preferably Amarena or Maraska
2 oz. brandy or Cognac

In a chilled old fashioned glass, muddle the sugar, bitters, orange wedge and cherry into a thick paste, careful not to work the orange peel. Add brandy or Cognac, stir, and fill glass with crushed ice and serve.

1 oz. Brandy
1 oz. Dark Crème de Cacao
1 oz. Heavy Cream
Pinch of freshly grated nutmeg

Shake the brandy, crème de cacao, and cream with ice; then strain into a chilled cocktail glass. Garnish with a pinch of nutmeg.

1.5 oz. VS or VSOP Cognac
.75 oz. Cointreau
.75 oz. Fresh lemon juice
Garnish with Orange peel

Coat the rim of a cocktail glass with sugar and set aside. (Do this a few minutes ahead of time so the sugar can dry and adhere well to the glass.) Add the remaining ingredients to a shaker and fill with ice. Shake, and strain into the prepared glass. Garnish with a piece of orange peel.


Campari Stinger

1 oz. Campari
1 oz. High Proof Cognac
.25 tsp. Grade B Maple Syrup
2 Mint Sprigs

Muddle mint in cocktail shaker. Add other ingredients. Shake and strain over crushed ice into a rocks glass. Garnish with a mint sprig.

3/4 oz. Cabo Diablo
3/4 oz. Cognac
3/4 oz. Dolin Sweet Vermouth
1/2 oz. Cherry Heering

Add all ingredients to a shaker with ice and stir vigorously. Strain and serve on the rocks.

Wild Thanksgiving

1.5 oz. Wild Turkey 81
1 oz. Applejack (or other apple Brandy)
1 oz. Cranberry Juice
1/2 oz. Fresh lime juice

Combine all ingredients in a shaker with ice and shake. Strain over fresh ice and garnish with an orange twist.

Wild Thanksgiving

Red Hot Chocolate
Served at 116 Crown in New Haven, CT, created by John Ginnetti

1 oz. Campari
2 oz. Brandy
3 oz. Whole Milk
0.5 oz. Heavy cream (optional)
2 tablespoons of dark chocolate chips

Put milk, cream & chocolate in a milk frothing cup used for espresso. Froth milk as you would for cappuccino. When milk is hot remove frothing wand and whisk or stir vigorously until chocolate is completely melted. Add Campari and Brandy. Pour into heat-resistant cup. Can be garnished with 1 large hand-cut marshmallow or a red peppermint stick.
