A well-made Mojito is always refreshing on a hot summer day. This riff builds on that refreshing quality with pear.

- 1.5 oz. Mount Gay Black Barrel Rum
- 0.75 oz. Fresh lime juice
- 0.75 oz. Simple Syrup
- 1.0 oz. Ambient pear puree
- 11 Fresh mint leaves
- Club soda to top
In a highball glass, lightly press on mint leaves with muddler. Add Mount Gay Black Barrel Rum and other ingredients, except club soda. Add ice, transfer to a shaker, and shake. Add club soda and pour back in highball glass. Garnish with mint leaves.
